In Pursuit of Flavor: Ancient Cuisine-Mesopotamia Talk Held!
The first of the "In Pursuit of Flavor" events that will continue as a series in our department was held. On May 5, 2024, we hosted Selen Mağzalcıoğlu, one of the founding chefs of 7Mila Restaurant, at the A Block Conference Hall. In the event, Ms. Mağzalcıoğlu took the students on a historical journey about the ancient flavors of Mesopotamian Cuisine and conveyed the history of both Mesopotamian cuisine and 7Mila Restaurant in the process. She also shared her ideas with our students on the history of Mesopotamian Cuisine, equipment and ingredients specific to the cuisine, the intersection of the cuisine with other cuisines and the culinary habits it has brought to the present day. After general information, she conveyed to the students how they brought changes to the important dishes of Mesopotamian Cuisine with modern touches through the restaurant menu. In addition to the information he provided, Mr. Mağzalcıoğlu also talked about the internship opportunities they offer to students in their businesses. The Q&A session was held after the talk. At the end of the event, Head of the Gastronomy and Culinary Arts Department, Asst. Prof. Nevruz Berna Tatlısu thanked the participant and presented him with a plaque.
