 Participation as a Speaker on Colour and Visuality in Gastronomy at Colors of the World Event


The psychological effects of colours and visuality in gastronomy were discussed with a scientific perspective in the interview attended by Istanbul Gelisim University Gastronomy and Culinary Arts Department.


The interview titled ‘Colour Psychology in Gastronomy and Visuality of Food’, organised by the Colors of the World platform, was held online on 20 April 2025. Istanbul Gelisim University Gastronomy and Culinary Arts Department also participated in the event.
 
The conversation was moderated by Hamza Kalkan. Among the participant speakers, IGU Gastronomy Departments Coordinator Assoc. Prof. Serdar Egeli and department faculty members Asst. Prof. Elif Cemre Özaydın and Asst. Prof. Ceyhun Uçuk took part. In the conversation, the effects of colours on the senses and eating behaviours, their place in cultural representations, their relationship with aesthetic perception and healthy eating perception were discussed from an interdisciplinary perspective. In addition, the future importance of visuality in gastronomy and the psychological effects of colours were discussed within a scientific framework.
 
At the end of the event, it was emphasised that colour and visuality in gastronomy is not only an aesthetic element, but also a sensory and psychological impact area.
